Zucchini Bread - from Lois Parrish

2 cups grated zucchini

1 cup vegetable oil (6 oz. of extra light olive oil)

1 1.2 cup sugar

2 tsp vanilla

3 eggs

- mix all of the above, then combine:

2 c pre-sifted all purpose flour

1 tsp salt

2 tsp baking soda

1.4 tsp baking powder

3 tsp cinnimaon

and then stir in 1 cup of raisins

 

Bake at 350 for 40 minutes in a 13x9.2" pan
