Back to Recipes from the kitchens of our members Morning Glory Muffins 2 c flour 1 1/4 c white sugar 2 t baking soda 2 t cinnamon 1/2 t salt 2c grated carrot 1/2 c. raisins 1/2 c nuts 1/2 c coconut 1 apple peeled, cored and grated 3 eggs, 1 c salad oil and 2 t vanilla In a large bowl, mix the first 5 ingredients. Stir in the next 5. Beat eggs, oil and vanilla together. Stir into flour mixture just until the batter is combined. Spoon into greased muffin tins, fill to top. Bake at 350F for 20 minutes.
